Viv Harvey

Butchery,

During his many years involved in the meat industry, Viv has travelled extensively throughout  learning his craft and providing training to butchers.

From preparing meat displays and presentations for the British Royal Family, to competing in international competitions, producing butchery guides, food styling, and having worked for the Meat and Livestock Commission,  Viv has a wealth of experience within the meat trade.

His extensive knowledge and knife skills have enabled him to work alongside high-profile Chefs including Brian Turner, Anthony Worrall Thompson, Gordon Ramsay and Phil Vickery amongst others.

Viv’s main belief is that the skills of knife work and meat presentation, gained over the years, should be passed on to promote skilled butchery techniques, and to keep meat the central part of a balanced meal.
