Historic Ices with Ivan Day
Take a culinary journey back through time and join celebrated food historian Ivan Day as you create a selection of ice creams and sorbets spanning the centuries.
Ice cream is an age old favourite with the earliest known European recipe dating back to an English recipe book from the 1660s.
During the course of the eighteenth and nineteenth centuries ice cream and water ices developed into a truly sophisticated element of British cuisine, with a remarkable range of flavours available.
Throughout the course discover how to create a wonderful range of period ices using traditional techniques and antiquarian equipment.
The finale of the day will be the unmoulding of some remarkable figurative ices made using Ivan's extensive collection of moulds. Prepare to be staggered.
This course includes refreshments and lunch.
