Join tutor David Carter for this half-day course and be transported to Portugal and the delights of Lisbon Café culture. Learn how to make your own pastéis de Nata, also known as Portuguese custard tarts.
David will demonstrate how you can make your own classic puff pastry from scratch, and, using pastry he has already made, you will make your own pasteis. (This pasteis recipe can also easily be replicated at home using a good quality all-butter ready-rolled puff pastry.)
David will teach you how to roll-out and prepare your puff pastry and the unique technique of pressing the pastry to line the pasteis moulds ready for filling. This filling is the special egg custard, which you will have made during the morning. You will then bake-off your pasteis in our domestic ovens.
Refreshments will be available during the morning. and buffet-style lunch, prepared in-house, is provided at the end of the course. All ingredients, equipment and illustrated recipes are also provided.
The School of Artisan Food is located on the Welbeck Estate in the heart of Sherwood Forest, Nottinghamshire, just a few minutes from the A1 and M1.
We make a conscious effort to reduce waste and packaging. Students are encouraged to bring their own containers in which to take food home.
