Paul Thomas FIFST is a dairy technical adviser, food safety expert and cheesemaking instructor.
After completing a degree in Biochemistry at the University of Dundee, Paul worked for several years as an affineur and cheesemaker across a variety of cheese technologies before setting up his own business as a freelance dairy consultant.
Paul has contributed technical articles to the Specialist Cheesemakers Association and is a member of the team writing the EC-funded Guide for Good Hygienic Dairy Practice.
