Advanced Pasta Making with Valentina Harris

If like us you love classic Italian food and want to learn how to recreate your favourite regional dishes at home, this is the course for you. This one-day masterclass is designed for anyone who has learnt the essentials of artisan pasta making and wants to develop their confidence and Italian cooking skills further.

Led by acclaimed food writer and chef Valentina Harris, this one-day course will delve further into the intense flavours and artisan traditions at the heart of Italian cooking. Under Valentina’s expert guidance you will be given plenty of opportunities to hone your practical skills as you make a range of fresh pasta and authentic sauces.

By the end of this hands-on masterclass you will have produced a delicious selection of dishes, including:

  • La Sfoglia (fresh pasta)
  • Pasta Verde (fresh green pasta)
  • Pasta al Nero di Seppia (fresh squid ink pasta)
  • Agnolotti di Magro (classic Piedmontese Agnolotti)
  • Culigiones (Sardinian filled pasta)
  • Sugo di Pomodoro (tomato sauce)
  • Timballini di Pasta ai Peperoni Arrosto (mini pasta timables with roasted peppers and meatballs)
  • Tagliatelle ai Quattro Formaggi (four cheese tagliatelle)
  • Tagliolini Neri Ajo Ojo (black tagliolini with garlic and olive oil)

A selection of the pasta you make will be served as a late lunch and other dishes will be available for students to take home and enjoy. Refreshments will be available throughout the day. All ingredients, equipment and recipes are provided by the School.
