TO BEGIN
Ham hock & cranberry timbale
Port wine jelly, sauce gribiche & toasted Welbeck sourdough

Twice baked Stichelton soufflé
Parmesan glaze, apple & caramelised spiced walnut


TO FOLLOW
Roast rack & loin of Welbeck venison 'Grand Veneur'
Anna potato, celeriac mash, spiced red cabbage & venison samosa

Local roasted crown of partridge
Biarritz potatoes, Brussels sprout & chestnut puree, confit leg & curried parnsip

Brick pastry money bag
Caramelised polenta galette, wild mushrooms, chive & plum tomato butter sauce


TO FINISH
The perfect bitter chocolate soufflé
Caramelised oranges flavoured with Cointreau, clotted cream & vanilla crème Anglaise


A glass of mulled wine will be served on arrival. Tasters of all the dishes will be provided at the end of the demonstration.
