Festive Chocolate & Confectionery


There’s no better time of year to indulge a sweet tooth than at Christmas. This one-day course is designed for anyone with a passion for all things chocolate. Throughout the day you will master the art of producing your own artisan sweet treats, perfect to share with family and friends over the festive season.

Tutor Shelly Preston is an experienced patissière and chocolatière who runs her own bean to bar chocolate lab, Ottar Chocolate, close to the School. One of our most popular teachers, Shelly will introduce you to both sweet and savoury flavours, as you explore the attributes of various cacao beans.

This hands-on day will begin with a chocolate tasting, before you discover more about various chocolate making techniques. You will learn all about the importance of tempering and be given the chance to try it out, as you work in pairs to create delicious festive products, including:

  • Ganache
  • Mandarin fruit jellies
  • Chocolate bars
  • Chocolate truffles
  • Sea salt whisky caramels

All your handcrafted produce will be available for you to take home and enjoy. Refreshments will be available throughout the day, as well as a buffet style lunch prepared by our team of chefs. All ingredients, equipment and recipes will be provided.
