Delicious seasonal game is growing in popularity and plays an essential role in traditional British cuisine. This one-day hands-on course celebrates the flavours of seasonal game as you learn how to cook and create gamekeeper’s favourites using a variety of locally sourced meat.

Guided by tutor and butchery expert Chris Moorby you’ll be introduced to a range of sustainable game meat and gain the skills, knowledge and confidence to transform it into delicious dishes, including:

  • Hand raised poacher's pie
  • Savoury cheesecake
  • Venison pastrami
  • Cured game terrine
  • Hot smoked gamekeeper's sausage
  • Potted game

Everything you make on the course will be available for you to take home and enjoy. Refreshments will be available throughout the day, as well as a buffet style lunch prepared by our team of chefs. All ingredients, equipment and recipes will be provided.
