Discover the new flavours and huge versatility of cooking with goat on this specialist one-day course. Despite being one of the most in demand meats in the world, used in a range of delicious international dishes, goat is only now growing in popularity in the UK.

Guided by tutor Andrew Sharp, an artisan butcher and adviser to His Royal Highness the Prince of Wales on his Mutton Renaissance Campaign, you will learn the practical butchery techniques and creative cooking skills needed to prepare and cook each cut of goat meat for maximum natural flavour. You will also cover how to identify quality meat, using the whole goat and the importance of goat to international cuisines, as well picking up plenty of ideas for new dishes and recipes using goat meat.

If you keep your own goats, want to develop your butchery skills or would like to learn how to cook using British goat meat, then this is the course for you. The day combines butchery demonstrations working with whole carcasses, food tastings and hands-on cookery sessions during which you will create various dishes such as:

  • Merguez sausages
  • Pan fried cuts of goat
  • Goat skewers
  • Goat tartare.

The goat is supplied by Cabrito who have won many awards including Observer Food Monthly’s Ethical Producer, Young British Foodies, and Good Housekeeping’s Champion Meat Producer. In 2017, Cabrito was highly commended for the BBC Food & Farming Awards.

Meat butchered on the day is available for you to take home. Refreshments will be available throughout the day, as well as a buffet style lunch prepared by our team of chefs. All ingredients, equipment and recipes will be provided.
