Pasta Making with Valentina Harris

Discover how to make your own fresh pasta and authentic Italian sauces under the expert guidance of acclaimed food writer and chef Valentina Harris.

During this practical one-day course Valentina will share her love of classic Italian food, equipping you with the confidence and the skills to create a selection of delicious pasta dishes. Using the best seasonal produce, you’ll learn about the fresh flavours and artisan techniques needed to recreate an authentic taste of Italy in your own kitchen.

No previous experience is necessary; just enthusiasm and a willingness to work alongside other food lovers to make real fresh pasta. By the end of this hands-on course you will have produced:

  • La Sfoglia - making fresh pasta
  • Pumpkin ravioli with walnut pesto
  • Maltagliati with rabbit sauce in the Arezzo style
  • Tagliatelle with pancetta and mushrooms
  • Classic Bolognese ragu
  • Orecchiette with radicchio
  • Pappardelle with a porcini mushroom sauce
  • Veronese pasta cake

A selection of the pasta you make will be served as a late lunch, while other dishes will be available for you to take home and enjoy. Refreshments will be available throughout the day. All ingredients, equipment and recipes are provided by the School.
