Discover how to make your own fresh pasta, gnocchi and authentic Italian sauces under the expert guidance of acclaimed food writer and chef Valentina Harris.

During this practical one-day course Valentina will share her love of classic Italian food, equipping you with the confidence and the skills to create a selection of delicious dishes. Using the best seasonal produce, you’ll learn about the fresh flavours and artisan techniques needed to recreate an authentic taste of Italy in your own kitchen.

No previous experience is necessary; just enthusiasm and a willingness to work alongside other food lovers. A selection of seasonal dishes will be made which may include:

  • Making fresh pasta
  • Tagliatelle with lamb ragu
  • Wild garlic pesto
  • Giant ravioli with a beetroot and mascarpone filling
  • Potato gnocchi
  • Tomato sauce with soffritto
  • Gnocchi alla Romana (with Gorgonzola)

July 2020

  • Making fresh pasta
  • Rustic ricotta gnocchi (with basil) (Gnudi)
  • Gnocchetti with pesto in the classic Genovese style
  • Tuscan spinach and bread gnocchi
  • Maltagliati in the Neapolitan style
  • La Puttanesca
  • Ravioli filled with lemon and ricotta

The School of Artisan Food is nestled in the heart of Sherwood Forest on The Welbeck Estate, Nottinghamshire, just a few minutes from the A1 and M1.

We make a conscious effort to reduce waste and packaging. Students are welcome to bring their own containers to transport their food home. Learn more here ...

Refreshments will be available throughout the day. All ingredients, equipment and recipes are provided by the School.
