Vegan Baking with Henrietta Inman


Learn how to create delicious vegan tarts, breads, biscuits and cakes on this one-day course led by author, pâtisserie chef and expert in baking with natural ingredients, Henrietta Inman.

Henrietta’s approach to baking is all about combining her skills and experience as a pastry chef with her love of wholefoods. Her extensive range of vegan sweet and savoury bakes balance the flavour, quality and texture of classic pâtisserie with the value and goodness of simple wholefoods.

On this course you’ll discover how to produce satisfying bakes without the traditional base ingredients of butter and eggs. Henrietta will teach you how to:

  • Use reliable alternatives to eggs, dairy milk, yogurt and cream in sweet and savoury vegan baking
  • Adapt traditional favourites to be vegan recipes
  • Present your bakes for maximum effect.

During this hands-on day you will make:

  • Tarts of spring greens with buckwheat, oat and hazelnut pastry and cashew béchamel
  • Yellow pea, quinoa, nut and seed loaf
  • Carrot and coriander crackers with mustard seeds and anise
  • Fig banana and dark chocolate cake with whipped cacao cream
  • Rhubarb and pistachio tartlets with buckwheat and almond pastry, strawberry jam and coconut cream
  • Crumbly chocolate and hazelnut baci biscuits
  • Figgy seeded chocolate water ganache tart with orange and sea salt
  • Walnut, flax seed and oat bran banana bread.

Refreshments will be available throughout the day, as well as a buffet style lunch prepared by our team of chefs. All ingredients, equipment and recipes will be provided.
