Rebecca attended the five day bread course run by Emmanuel Hadjiandreou at the School, and now heads up the successful Two Magpies Bakery in Southwold, Suffolk which employs the next generation of Advanced Diploma students from the School: Sam Cutter and Aimee Roberts.
Rebecca, who now employs 17 people in her Bakery-Café on Southwold’s busy high street, opened the business in April 2013. She had worked as a Secondary School Art and Textiles teacher but, as with so many people, got the bread baking “bug” and decided to change careers and utilise her creative skills in the kitchen.
Rebecca said: “It is great to have the ongoing links with the School: Wayne has been a source of support and guidance to me and my bakers and there are benefits on both sides when we have placement students come to us during their course; it’s also nice to think we are giving something back too.”
Two years on from opening, the business is going from strength to strength. The community bakery produces a fantastic range of artisan bread and patisseries and there is a 16-cover seating area for customers to share their love of good food, swap stories and relax whilst enjoying speciality coffee and good music. Voted Runner-up in the Best Independent Retailer Observer food monthly awards within six months of opening (2013) and again in 2014.
