There’s a growing appreciation for understanding where our food comes from and the skills involved in transforming livestock into high-quality meat products.

This comprehensive six-day course provides an immersive introduction to artisan butchery, combining traditional techniques with a deeper understanding of sustainable meat production, native breeds and whole-animal utilisation.

Led by experienced butcher Andrew Sharp, who specialises in native breeds, sustainably reared meat and traditional butchery methods, this course has been designed for existing butchers, chefs, business start-ups, smallholders and ambitious home cooks looking to develop practical skills and industry knowledge.

Throughout the programme, you’ll work with a variety of species, learning how different animals are broken down, how cuts are identified and utilised, and how value can be added through further processing. The course concludes with an insightful farm visit, helping you connect the relationship between farming practices, animal welfare and meat quality.

Beef Butchery

You’ll begin by developing a strong understanding of beef butchery, including:
  • Whole-animal beef butchery
  • Beef cut nomenclature
  • Traditional and modern butchery methods
  • Understanding the uses of different cuts
  • Maximising value through cut selection and preparation

 

Further beef sessions will build on these foundations, exploring:
  • Advanced butchery techniques
  • More detailed cut identification
  • Culinary applications across the carcass
  • Creating added-value products

 

Lamb and Mutton Butchery

You’ll explore the distinctive characteristics of lamb and mutton, including:
  • Whole-animal lamb and mutton butchery
  • Lamb and mutton cut nomenclature
  • Different butchery styles and techniques
  • Traditional and modern culinary uses
  • Understanding flavour, texture and carcass utilisation

 

Pork Butchery

Working with whole pork carcasses, you’ll learn:
  • Whole-animal pork butchery
  • Pork cut identification and nomenclature
  • Different butchery approaches and techniques
  • Utilising different cuts effectively
  • Matching cuts to suitable culinary applications

 

Advanced pork sessions will also cover:
  • Refining butchery techniques
  • Charcuterie and sausage production
  • Added-value pork products
  • Creating speciality items with enhanced market value

 

Farm Visit and Meat Production

An integral part of the course is a visit to Home Farm Produce, where you’ll gain first-hand insight into sustainable livestock production and the complete journey from farm to fork.

Topics explored may include:
  • Soil health and agronomy
  • Rare and traditional breeds
  • Animal nutrition and feed systems
  • Welfare and husbandry practices
  • The relationship between farming methods and meat quality
  • Building transparent and traceable supply chains

 

This visit brings together the key principles explored throughout the course, providing a deeper understanding of how genetics, nutrition, welfare and farming practices contribute to producing exceptional meat.

    Andrew Sharp

    Andrew ‘Farmer Sharp’ was brought up on a mixed farm in Cumbria.

    At the age of 13 he went to work in a butchers’ shop, which had its own farm and abattoir. At that time they were one of the few butchers’ shops selling lambs and pigs from the local area and a full range of game; plucked, dressed and prepared in the shop. They were also hanging and maturing its beef, the old fashioned way, which has now become all the rage in the artisanal butchery sector.

    For 15 years Andrew ran his own medium sized, British Retail Consortium approved cutting plant selling herdwick lamb, herdwick mutton, galloway beef, naturally reared pink veal and air dried mutton from Cumbria to all over the UK, to the EU and even Hong Kong.

    He is a founding member of the Mutton Renaissance Campaign, inspired by His Royal Highness the Prince of Wales, and run day to day by the Academy of Culinary Arts.

    Andrew has made several media appearances including the Radio 4 Food program, Kill it Cook it Eat it to Turn Back Time The High Street and Hugh’s 3 Good Things, to name but a few.

Accommodation

Student-style shared, self-catered accommodation is available on the historic Welbeck Estate. The lodges sleep 2–3 people and rooms will be allocated on a first come, first served basis at booking. All accommodation features shared bathrooms and shared kitchens, and is within a short walking distance from The School of Artisan Food. All bedding is provided, and a welcome will be available on arrival.

The process is simple: Book your place with accommodation and then email info@schoolofartisanfood.org for further details and confirmation.

Alternatively, Welbeck Estate has a range of holiday lets a short distance from the School and there are several local B&Bs and hotels. Please refer to the Where to stay section on our website for more information.

For The School of Artisan Food Cottages only:

Check-in is only available between 3 pm and 6 pm on the Sunday before your course starts. Please depart from the property before 10 am on the following day after your course ends.

Please note that the School provides a secure space for luggage storage while you complete your final day. However, belongings are left at your own risk, and the School cannot accept responsibility for any loss or damage.
