Our Higher Diploma in Artisan Baking and Business Skills is an intensive, six-month, full-time programme designed for aspiring bakers, career changers and food entrepreneurs who want to turn their passion into a profession.
Delivered at The School of Artisan Food on the historic Welbeck Estate, this unique course combines practical bakery training with the commercial knowledge needed to succeed in today’s artisan food industry. Accredited by Food and Drink Qualifications (FDQ), the programme is recognised throughout the baking sector for its high standards and industry relevance.

What will you learn?
Throughout the course, students gain hands-on experience across every aspect of artisan baking. During your studies, you will create a range of different breads, pastries and baked goods while developing a deep understanding of ingredients, fermentation, production techniques and bakery operations.
Artisan Bread Baking
Learn traditional and contemporary bread-making techniques, from naturally leavened sourdoughs and enriched breads to international classics and heritage recipes. Students will develop an understanding of the science of baking and learn how to create products of exceptional quality and consistency.
Patisserie and Viennoiserie
Develop the skills required to produce high-quality patisserie and viennoiserie products through intensive practical training. From laminated doughs and pastries to refined sweet bakes, our students learn the techniques, precision and attention to detail demanded by the artisan baking industry.
Business and Enterprise Skills
Successful bakeries require more than exceptional products. Through interactive business-focused modules, students gain the employability, entrepreneurial and management skills needed to establish and run a thriving artisan food business.
By the end of the programme, students will have developed a business plan that can be used as the foundation for a future bakery, food venture or career pathway.
Industry Experience and Work Placements
Our extensive industry network provides students with opportunities to undertake work placements with leading artisan bakeries in the UK and overseas.
These placements offer invaluable real-world experience and allow students to learn directly from successful artisan bakers while building professional networks that often continue long after graduation.

Located within the beautiful Welbeck Estate in the heart of Sherwood Forest, The School of Artisan Food offers a truly unique learning environment.
Students become part of a vibrant community of artisan producers, surrounded by award-winning bakeries, cheesemakers, brewers, distillers, cafés and food businesses. The estate provides an inspiring setting in which to study, collaborate and build connections within the artisan food sector.
Accommodation
For students relocating to attend the programme, self-catered accommodation is available on the Welbeck Estate for an additional fee.
The fully furnished lodges are within walking distance of the School and provide comfortable living spaces throughout the duration of the course. Accommodation is allocated on a first-come, first-served basis.
Entry Requirments
We welcome applications from individuals with a wide range of backgrounds and experiences.
Typical entry requirements include:
Five GCSEs at Grade 4/C or above, including English and Mathematics
Applicants must be aged 18 or over

Course Fees
The course fee for the 2026/27 Higher Diploma in Artisan Baking and Business Skills is £15,700.
Please note that accommodation and uniform costs are not included within the course fee.
