Take a culinary journey back through time with this one-day course which combines hands-on ice-cream and sorbet making with fascinating food history. The British love of ice-cream and water ices dates back to the 17th century and is still going strong.
Led by celebrated food historian, broadcaster and writer Ivan Day, the course will give you an opportunity to discover how to create a fabulous range of period ices, using traditional techniques and antique equipment. Ivan will share knowledge acquired during decades of research and bring along treasures from his vast collection of antiquarian cookery books and culinary utensils. The day's finale will be the unmoulding of some remarkable figurative ices made using Ivan's extensive collection of moulds.
Refreshments will be available throughout the day, as well as a buffet style lunch prepared by our team of chefs. All ingredients, equipment and recipes will be provided.
