Ice cream is an age old favourite, with the earliest known European recipe dating back to an English recipe book from the 1660s. During the eighteenth and nineteenth centuries ice cream and water-ices developed into a truly sophisticated element of British cuisine, with a remarkable range of flavours.
Discover how to create a fabulous range of period ices using traditional techniques and antique equipment.
The day's finale will be the unmoulding of some remarkable figurative ices made using Ivan's extensive collection of moulds. Prepare to be staggered!
