Sticky Buns & Fruit Breads

Sticky buns and fruit breads are the ultimate comfort foods, perfect for making and sharing with friends and family all year round.

Guided by our tutor and expert baker Wayne Caddy, the UK's representative for the bakery World Cup, you’ll learn how to make a selection of traditional British teatime treats. Throughout this one day course, which combines demonstrations with hands on baking sessions, you will cover topics and techniques, including:

  • The importance of ingredients
  • Hand mixing, shaping and rising
  • Preparation of inclusions, fillings and toppings
  • Use of domestic ovens

You will have the opportunity to make a selection of products, which you can taste on the day and then take home and enjoy, including:

  • Lincolnshire plum loaf
  • Jammy doughnuts
  • Chelsea buns
  • Iced fingers
  • Hot cross buns
  • Sticky pecan buns

This course will take place at the School of Artisan Food with all products baked in conventional domestic ovens.

Refreshments will be available throughout the day, as well as a buffet style lunch prepared by our team of chefs. All ingredients, equipment and recipes will be provided.

Everything you make on the day will be available for you to take home and enjoy. The School of Artisan Food makes a conscious effort to reduce waste and packaging. Students are welcome to bring their own containers to transport their food home. Learn more here ...

'What a day! The day just got better and better. Lovely setting, every member of staff was welcoming and friendly, the facilities were excellent, the course was at a good pace, very informative and most importantly very enjoyable. This was a great experience - give it a try and you will not be disappointed. I certainly will return to SAF.'

'I was hoping to firm up skills in these difficult doughs, this was exactly what I got. Wayne was always on hand to steer everyone in the right direction, no matter what your skill or experience level. Everything was provided for the whole day including aprons. I also got to bring home all the buns I baked (to everybody's delight). All in all a great day out for anyone regardless of your skills.'
